Ingredients
4 Eggs 2 Cup Flour
112 Cup Oil 2 Cup Sugar
1 Teaspoon Salt 2 Teaspoon Cinnamon
1 Teaspoon Baking soda 212 Cup Carrots, grated
12 Cup Pecans, chopped 1 Teaspoon Baking Powder

Directions

In a bowl sift together the flour, baking powder, baking soda, salt, and cinnamon and set aside. In a large bowl blend together the oil and sugar. Add eggs one at a time blending well between each addition. Blend dry ingredients into wet ingredients mixing well. Blend in carrots and pecans. Mix well. Grease and flour three 8" pans or two 9" pans. Pour batter into pans and bake at 350� for 30-60 minutes (pan size will determine time). To test for doneness, insert a toothpick into center of layer and if it comes out clean the layer is done. Cool layers completely before icing.
