Pork Chops and Sweet Peas

Ingredients
212 Pound Pork chops 4 Cup Onions, chopped
2 Tablespoon Cooking oil 3 cans small Sweet peas
2 Tablespoon Cajun seasoning  

Directions

Wash chops well to remove the bone dust then rub in 2 tablespoons Cajun seasoning. Heat oil in a large dutch oven on medium-high heat and add chops when oil is hot. Brown chops on both sides then add onions and cook on medium heat until onions are clear about 15-20 minutes stirring often. Add peas with their juice and stir well. Cook covered at least 30 minutes or until chops are tender. Serve over rice.

Makes about 1.5 quarts of peas and gravy.
