2 Eggs |
1⁄2 Cup Flour |
1⁄2 Cup Sugar |
1 Teaspoon Vanilla |
1 Cup Pecans, chopped |
2 Teaspoon Lemon juice |
1 Cup Light brown sugar |
1⁄3 Cup Evaporated milk |
1⁄3 Cup Margarine, melted |
3 Cup Sweet potatoes, cooked and mashed |
1 Teaspoon Cinnamon or pumpkin pie spice (optional) |

Mix well in a large bowl sweet potatoes, vanilla, evaporated milk, sugar, lemon juice, eggs and cinnamon or pumpkin pie spice. Pour into a 11� x 7 � inch glass baking dish (a similar size will do). Mix together well the light brown sugar, margarine, pecans, and flour then sprinkle on top of potato mixture. Bake at 350� for 30 minutes.
