Beet Salad

Ingredients
1 Cup Vinegar 1 Teaspoon Salt
2 #303 cans Beets 1 Onion (optional)
12 Teaspoon Black pepper 1 Cup Beet liquid, reserved

Directions

Drain beets reserving 1 cup liquid. Cut beets into 1" pieces or leave as slices. Peel and cut onion in half then slice thinly forming half rings. Combine all ingredients in a large bowl and toss lightly to mix. Place in refrigerator for 1 hour before serving.

Makes unspecified amount.
