Yellow Rice

Ingredients
6 Eggs 23 Cup
14 Cup Oil 1 Teaspoon Salt
14 Cup Evaporated milk 5 Cup cooled cooked Rice
1 Teaspoon Tobasco sauce (optional) 23 Cup shredded Cheddar or american cheese

Directions

Heat oil in large skillet over medium heat until hot. If using meat add now and cook until hot. Add rice evenly on bottom of skillet and do not stir right away or rice will stick baddly. Let fry about 1 minute then stir well. Sprinkle salt over rice and let fry another minute then stir well again. Continue until rice has cooked 8-10 minutes (rice should not be fried too hard). As you are frying rice prepare egg mixture by adding to a mixing bowl the eggs, evaporated milk, and Tobasco sauce. Beat with a fork until well mixed. Pour into rice and stir well. Stir often to keep eggs from burning on bottom. Cook until eggs are set. Serve hot. This great breaksfast food is good by itself or topped with Cajun salsa for extra kick! (Who said you don't eat rice for breakfast!)
