Sweet Potato Pie

Ingredients
11⁄2 C Milk 2 Tbsp Butter
1 pinch of salt 2 eggs - well beaten
1⁄2 C Light brown sugar 2 C cooked mashed sweet potatoes
2 tsp cinnamon or pumpkin pie spice 1 Tbsp lemon juice with a little grated rind

Directions

Mix all ingredients together well and pour into unbaked pie shell. Bake at 350 degrees for about 20 minutes or until set.
